Will the stock head unit from the GTS fit in a GT without a different wiring harness?

its the same head unit no difference.except from 2003 adn up they got a new one which would still work. but all previse year are teh saem head unit

Isn't the wiring different though from GTS to GT?

Yeah that's what I'm wondering. Will the GTS head unit use the same wiring harness in the GT?
