I have a GT and the pedal covers are rubber ( clutch and brake), and I have a set of Sparco pedals, the clutch and brake can be attached but the gas is differnt. Do i need to drill holes right through the gas pedal? or is there a way to take it off?

drill right into it, the gas pedal is plastic "plate" snapped onto the bar. So, there is nothing but a bent bar under the gas pedal, feel the bottom and you will see what I mean.

I drilled to put my gas pedal on. The only one that you really put on without drilling is the gas pedal from the gts. You replace the entire arm and pedal.
